Baby Cos salad with Asian dressing

BABY COS SALAD WITH ASIAN DRESSING

Ingredients:

1⁄2 bunch shallots 1 Petite Cos (The Fresh Grower )

1⁄4 cup white vinegar

1⁄2 cup caster sugar

1⁄2 cup Light Olive Oil 1 packet Pine Nuts (or sunflower seeds)

4 tablespoons Soy Sauce (Lee Kum Kee Premium Soy Sauce is ideal for dressings)

2 packets Almond Flakes

1-2 packets Choice Savoury Fried Noodles

Method:

Combine sugar, vinegar, soy sauce and oil in a saucepan. Heat ingredients slowly, stirring to combine, until mixture boils. Remove from heat and put aside to cool.

Cut or shred lettuce to suit. Cut shallots and combine with lettuce in a large bowl.

Toast almonds and pinenuts on a frypan until golden brown.

Add the nuts to the salad greens followed by the dressing and fried noodles. Toss well before serving.

Serves 6-8 people
